  • History and Origins

    After studying at the Lycee Viticole de Davaye, followed by a sabbatical in New Zealand, the winery of David Bienfait was born in 2009. Positioned in the commune of Bussieres towards the South of Burgundy in the Maconnais region, David now owns 6 hectares of vines. Situated on the somewhat magical soils of Charnay, Davaye and Vergisson. David produces just three wines; Macon Villages, Pouilly Fuisse and Saint Veran.

  • Philosophy and Methods

    Passionate about nature, David centres his focus by dedicating his time and efforts to the vine, in the hope of obtaining the finest possible quality of ripeness from his grapes. His approach is mindful and intensive, going by conscious observation and daily contact with his rows. Preferring a more authentic expression of his Burgundian terroir, using natural herbicides to help boost the natural power of the soil. Chemical treatments are kept to an absolute minimum, only intervening to control pests and disease.

    After picking at optimal phenolic ripeness, the grapes are slowly pressed, slow and long alcoholic fermentation take place in the large oak vats which are thermo regulated between 16 and 18 degrees to preserve the freshness of aromas. During ‘elevage’ the lees in the barrels are regularly stirred, depending on the vintage, to give richness to the wines.

  • Intention and Production

    David’s wines are some of the finest of the region. Only available in miniscule quantities, they exemplify his painstaking approach of time and dedication to his raw materials. Abundant with freshness throughout, the oak well harnessed to allow for extended ageing. The Pouilly Fuisse Les Crays is a consistent standout but for daily consumption, it is hard to find a more consistent and true Macon Villages than that of David’s.
